- just shy of 2 cups almond flour
- 2 eggs
- 2 tsp. olive oil
- salt to taste
Heat oven to 325F. Mix the first three ingredients together. Put the dough between two sheets of parchment paper and roll out to a maximum of 1/4 in thick. Sprinkle salt to taste on top of the rolled dough, place the parchment paper back on top and roll the salt into the surface of the dough. Score the crackers with a knife to make a grid, so that it can be broken apart into crackers easily once cooked. Bake 10-12 minutes until edges brown. Break crackers off from the edges in as they cook through. Keep in an airtight container for about a week. You can add other seasonings or fresh herbs to give these a “tailored” taste!
