Burgers with Paleo Honey Rolls

OH. MY. GOSH. If you guys have not been to Brittany Angell’s website, you MUST go. She turns everything conventional into paleo, grain-free, gluten-free, dairy-free, nut-free…everything -free that she can. She’s redone all the Little Debbie snacks, belgian waffles, cereal…it’s insanity. There’s a great deal that I have not yet made from her site, but I hope to make it all little by little! Now, of course, not everyone has these sensitivities so you may not need to make her recipes. But, if you know someone who does you should absolutely pass this on!!

This week I decided to try my hand at her Paleo Honey Wheat Rolls because I had planned on making burgers. They were an absolute SUCCESS! Even the part where I didn’t have ring molds. I took a pyrex dish, wrapped some aluminum foil around it nice and tight, slid it off and sprayed the inside with olive oil so the “dough” wouldn’t stick!! Genius, I must say.

As for the burgers, I wanted something spicy and smoky (you know that about me by now, right?). And for our side, I thawed out some previously cooked butternut squash. I’m obsessed with freezing leftovers because it’s such a great feeling when I realize that I can avoid dirtying a pan and that I’m saving money and time!

Ingredients

1 lb. ground beef (We like them big. I make the hubby’s burger bigger than mine, but we use the whole pound because we don’t eat much meat earlier in the day)

2 chipotle peppers in adobo sauce

1 clove garlic, minced

1 tsp. chili powder

1 avocado

2 tbsp. homemade mayo

coconut oil

Directions

Melt 1 tablespoon coconut oil in a pan. Mix all ingredients together in a bowl with your hands. Form into patties and place into the pan, making sure to make an impression in the middle of the burger so that the juices don’t build up in there and it cooks evenly. Cook for 5-6 minutes per side depending on your stove and the thickness of the burgers.

Cut up the avocado to layer on top of the burger. Spread 1 tablespoon mayo on one half of each bun.

Serve with a side of your choice!
