Today I finished making the meal that I had started last night when I did that double meal prep: Chicken Satay with “Peanut” Sauce from Against All Grain. I also cooked up some frozen broccoli using bone broth and cut up a delicious avocado for us to share.
Sometimes it’s hard to incorporate bone broth into regular consumption. That’s when it becomes important to use it when cooking things that you might otherwise use water for (e.g. rice, paste, poached dishes, etc.). I used bone broth to steam my broccoli tonight!
3 cups frozen broccoli
1/2 cup bone broth
salt and pepper to taste
Heat the bone broth in a saucepan to a simmer on the stove. Add the frozen broccoli and cover to cook for about 5-7 minutes until the broccoli has thawed and is tender. Remove the cover and let the liquid cook down until it just glazes the broccoli. Add salt and pepper to taste.
This “peanut” sauce was delicious and marinating the chicken overnight was a great idea! I used sunflower seed butter instead of almond butter because that’s what I had. It was definitely a meal worth repeating.
