Deviled Eggs

Seriously, you won’t find a better deviled egg recipe than this! It includes my homemade mayo and smoked paprika: two of my favorite things!

7 medium eggs

1/2 cup mayo

1/2 tsp. salt, or to taste

1/2 tsp. smoked paprika, or to taste



Fill a medium-sized pot with water and add the eggs. Bring to a boil over medium-high heat. At the first sign of boil, cover the pot and turn off the burner. Allow the eggs to sit for 10 minutes in the hot water. Meanwhile, fill a large bowl with ice and top with cold water. Drain the pot and transfer the eggs to the bowl of ice. Allow them to sit in the ice water for at least 30 minutes. When you are ready to peel them, tap the top and the bottom of the egg on a hard surface so they crack. Peel the egg from either end, under running cold water. Once all the eggs are peeled and rinsed, slice them lengthwise and remove the yolk. It should be bright yellow/orange in color, because you won’t have overcooked them! Put the yolks in a bowl with the other ingredients. Mash the yolks well with a fork, and make sure that the spices are distributed evenly. Spoon the mixture into the egg white halves and try not to eat them all while you are making them!!
