This was something I decided to try based on a shrimp recipe we had seen before. We both really like horseradish and I had picked up a bunch of organic chicken wings on sale at the grocery store.
Sometimes you’ve got to just try something new!
1 lb. chicken wings, rinsed
1/4 cup tomato paste
1/4 cup horseradish, drained
3 tablespoons olive oil
1 tsp. hot sauce
salt and pepper to taste
Mix together the tomato paste, horseradish, olive oil, hot sauce, salt and pepper. Add the wings and mix to cover. Let the mixture marinate for at least one hour. Preheat oven to 400F. Once the oven is warmed up, place the wings on a rack on top of a baking sheet so that they can crisp up as they cook (I use a metal cooling rack for this purpose). Let the wings cook for 45-50 minutes depending on their size.
If you have some homemade mayo, you could easily make a paired dipping sauce! Use about 1/4 cup mayo to 2 tablespoons horseradish. Add in a little champagne vinegar to give it a kick and salt to taste. Mmm, mm. That mayo is good for everything.
I paired this meal with a side salad with olive oil and vinegar, mashed sweet potatoes and fermented carrots.
