Oversized Salad: Southwestern-style

This dressing was SO good. I wanted to put it on everything after I made it! It dressed up an otherwise very simple salad.


Southwestern Dressing

1/2 cup mayo

1/4 cup coconut milk (use more or less depending on desired consistency of dressing)

1 tbsp. chili powder

1 tsp. ground cumin

1 tbsp. paprika

1/2 tsp. black pepper

1/2 tbsp. ground coriander

1 tsp. cayenne

1/2 tbsp. garlic powder

1 tsp. crushed red pepper

1/2 tbsp. salt

Mix all ingredients in a bowl and keep chilled until ready for use.


Salad Ingredients

2 chicken breasts

2 bell peppers

4 cups mixed greens


Use a meat mallet to pound the chicken to 1/4-in thickness. Sprinkle with salt and pepper. Cook in coconut oil over medium heat for about 5 minutes. Flip the chicken and add the bell peppers to the pan, spreading around the outside of the chicken and sprinkling with salt and pepper. Cook the chicken and bell peppers for another 5-6 minutes. Remove the chicken and slice, leaving the bell pepper to cook for a few more minutes. Plate the lettuce and top with the sliced chicken and bell peppers. Drizzle the southwestern dressing on top to your liking.
