Oversized Salad: Taco-style

Sometimes, when you are one of the following:

  • tired
  • stressed
  • pressed for time
  • or, just plain lazy

you need to just made an oversized salad and relish in the fact that you are eating a superb dinner that barely took any time. You can put anything you want on a salad! Meat, veggies, fruits, fats…you could get everything you need on top of a huge pile of lettuce. You could also get this meal done in less than 15 minutes!

I decided to make this salad taco-themed because we love those seasonings.



4 cups spring mix greens

1 pound ground beef

1 tbsp. chili powder

1/2 tsp. cayenne

a dash of cumin

1 tsp. salt

1/4 red onion, diced

salsa, to taste

1 avocado

2 tbsp. olive oil

1 tbsp. coconut oil



Add 1 tablespoon coconut oil to a saute pan to melt over medium heat. Add the ground beef and cook until browned. While it’s cooking, dice the red onion and avocado. Divide the lettuce between two plates and drizzle with olive oil. Add the red onion, avocado, and salsa to the plates. Although I could make a salsa, this meal is intended to be easy and quick so I use a great organic salsa from the grocery store that I love because of it’s quality ingredients. Once the meat is close to fully cooked, mix in the seasonings. Add the ground beef to the salads and enjoy!
