While my sister and her husband were visiting we decided to have a pizza night. I was craving pizza and I had some chicken in the freezer. I used the pizza crust recipe from Paleo Cravings, which I LOVE, LOVE, LOVE! It’s an unrivaled pizza crust so far in my book. And, I looooove sauteed mushrooms, so they had to go on the pizza. Here we go with some weekend comfort food!
1 pizza crust (try Paleo Cravings!!)
1 cup cooked, shredded chicken
8 oz. baby bella mushrooms
shredded cheddar cheese
marinara sauce to taste
While the pizza crust is baking, get your chicken ready. If I am planning on shredding it, I usually poach the chicken in boiling water for 10 minutes. Then, I shred it quickly after removing it from the water before it gets too tough. Tonight, I decided to pan-fry the chicken in some butter with the mushrooms.
Add 1-2 tablespoons butter to a saute pan. Season the chicken with salt and pepper and add to the pan. After about 6 minutes, flip the chicken and add the mushrooms. Let them cook for another 6-7 minutes, stirring to keep the mushrooms evenly cooked. Remove the chicken from the pan and shred quickly before it cools.
Once the pizza crust comes out of the oven, spread marinara sauce to taste on the crust. (I used homemade marinara sauce from the hubby’s aunt – mmm, mmm, good). Then, layer the chicken and mushrooms on top. Finally, spread the shredded cheddar on top. Put the pizza back in the oven for about 8 minutes to heat all ingredients. Finish the pizza up by turning the broiler on and letting the cheese brown a little on top. Let the pizza cool for a few minutes before slicing (good luck!).
