Salmon salad with tomatoes, peppers and dill dressing

This is one of my FAVORITE salads to make. I get really good quality salmon, saute some peppers and make my signature dill dressing. This time I decided to add some green tomatoes since we have a MILLION in the garden still!! Guess I shouldn’t have planted those seedlings so late in the season…



2 wild caught salmon fillets

2 bell peppers (yellow, red, or orange)

2 green tomatoes

4 cups spring mix lettuce

1/4 cup homemade mayo

2 tbsp. coconut milk

1 tbsp. dried dill

1 tsp. salt

1/8 tsp. garlic powder

pepper to taste



Melt 1 tablespoon coconut oil in a saute pan. Salt and pepper fillets, and sprinkle a little dried dill on for good measure. Cut the peppers into thin slices and dice the tomatoes. Add the peppers to the pan and allow to saute for about 10 minutes. Move the peppers to the edges of the pan and add the salmon fillets and chopped tomatoes. Cook the salmon for about 4 minutes on each side and move the vegetables around so they continue to cook. Meanwhile, put the mayo, coconut oil, dried dill, salt, garlic powder, and pepper to taste in a bowl and whisk together. Plate the lettuce, cooked salmon, peppers, and tomatoes. Drizzle the dressing on top and enjoy!
