I made this potato salad recently and amazing is all I can say. We had it with “breaded” perch and it was SO GOOD! I just love a little tartar sauce, and this was a different way to incorporate it with fish!
First, I used my spiralizer to turn my peeled potatoes into noodles. Then, I melted a couple tablespoons of coconut oil in a bowl and mixed the potato noodles around to make sure they were all evenly coated. Next, I spread them out on a baking sheet and baked them for about 20 minutes at 350F. Meanwhile, I used this tartar sauce from the Food Network site as a guideline for my own homemade version. I used homemade vinegar pickles, homemade mayo, and slightly less capers.
It was SUPER good. I would highly suggest changing up the appearance of your potato salad sometime soon!! Makes it more fun to eat 😉
