My husband and I cannot get over this recipe, and neither can the people we’ve given it to. It’s just that good. I found the original recipe inside a burger recipe from Food Network, but didn’t have all the ingredients it called for. So, from the very beginning I adapted it and have never looked back.
First, gather a bunch of green tomatoes; I’ve made it with green tomatoes from the store but the pictures below show green tomatoes from my husband’s aunt – the one with the infamous garden. Then, follow the directions below.
For every two tomatoes you have, use the following:
- 1 jalapeno, seeded and chopped
- 2 tbsp. lemon juice
- 1 tbsp. sugar (I use organic cane sugar)
- 1/4-1/2 medium red onion chopped (depending on the size of the onion)
- 1 tsp. salt or to taste
Dice the tomatoes. Add the lemon juice, sugar and salt and mix well. Microwave for 2 minutes. Stir in in the red onion and jalapeno. At this point, I like to let it all sit for a little bit for the juices to infuse. I don’t particularly like all the liquid that gathers since the ingredients are so juicy themselves, so I ultimately drain some of the liquid out before I jar it. Feel free to leave the juice in, or even put it all in the food processor to chop it up a bit more and make a “soupier” salsa, rather than a chunky one. And then? Eat. It. Up.
We put it on chicken, burgers, or sliced cucumbers. I also like to eat it with homemade almond flour crackers.
