This is one of my go-to snacks for family gatherings, essential oil classes, or that darned sweet tooth! They are SUPER easy to make and taste amazing. Make sure that you use clementines without seeds, otherwise that delicious chocolate could be hiding something you don’t want to crunch down on ;-).
6 clementines, peeled and separated
1/2 cup chocolate chips (this is the brand I use)
1 tbsp coconut oil (this is the brand I use)
5 drops wild orange essential oil (my brand of choice)
Fill a small saucepan with a few inches of water and heat over medium heat on the stove top.
Place a glass bowl on top of the saucepan, creating your own double-boiler (make sure the bowl is large enough not to drop into the pan – we don’t want any condensation getting into the chocolate).
Add the chocolate chips and coconut oil to the bowl, stirring regularly until fully melted.
Meanwhile, get a cookie sheet prepared by covering it with parchment paper.
Remove the double boiler from heat and stir in 5 drops wild orange essential oil.
Using your (clean) fingers, dip one clementine piece at a time into the chocolate mixture and place carefully on the parchment paper. Repeat until you have covered all clementine pieces.
If you have extra chocolate leftover, feel free to drizzle on top of your clementines now. Or, wait until the chocolate has hardened on the fruit and drizzle the warm chocolate mixture on top for an elegant design!
Place the cookie sheet in the fridge for about 20 minutes, allowing the chocolate to harden.
Once the chocolate is hard, place the pieces in a glass container and keep in the fridge until you are ready to serve them!
